This is the funnest dish. The spinach doesn't over power the eggs so it's a good way to sneak in those veggie servings for the kids. Give it a try, you won't be sorry!!

Ingredients For green eggs and ham

  • 2 1/2 c
    spinach leaves
  • 12
    eggs
  • 1 tsp
    kosher salt
  • 2 Tbsp
    unsalted butter
  • thin ham slices

How To Make green eggs and ham

    Blanch spinach. Squeeze out all excess water from spinach as if you are squeezing a sponge.

    Puree spinach and eggs until smooth

    In a muffin tin, line each cup with ham creating a "bowl". Bake in oven 10 - 15 minutes. Just until it starts to brown some. You want it to keep the cup shape.

    Drop tablespoon butter in hot skillet and add eggs. Cook and remove from pan. Should be soft moist and fluffy.

    Place ham"cup" on plate and fill with green eggs.
