I love fritattas, especially for brunch. Since i have some left over goat cheese and plenty of herbs, this is what I'll make this Sunday...Yummy! A very quick and easy and wonderfully filling recipe.

4basil leaves, chopped

salt and pepper to taste

3 Tbspolive oil

1shallot, chopped

10cherry tomatoes, halved

4 ozgoat cheese, crumbled
How To Make goat cheese and herb fritatta

1Heat broiler, place broiler rack 6" from heat. In bowl, beat eggs, basil, a pinch of salt and a pinch of pepper.

2Heat oil in lg heat proof skillet, over med-low heat. Cook shallot 3 mins. Add eggs to pan, stir gently. Cover, cook about 3 mins.

3Place tomatoes and goat cheese evenly over fritatta. Place skillet in broiler. Broil 5 mins or until it seems to be set. Cut into wedges.
