This is a common Southwest/Tex-Mex breakfast recipe. But this version is a little different than the other recipes I've seen with the same title. So I thought I'd post it here for another option for anyone looking for a Tex-Mex breakfast idea.

Ingredients For fiesta egg scramble

12 lgeggs, slightly beaten

3/4 cheavy cream
-
1 tspsalt
-
2 Tbspbutter or margarine, melted

1 conion, chopped
-
1 cred bell pepper, chopped

1 csliced mushrooms
-
1(4-ounce) can green chilies, diced

6 slicebacon, cooked and crumbled

3/4 ccheddar cheese, shredded
-
3/4 cmonterery jack cheese, shredded
How To Make fiesta egg scramble

1Combine eggs, cream and salt in medium bowl.

2Melt butter in a large skillet; cook onion, bell pepper, and mushrooms until tender.

3Add the chilies, bacon, and egg mixture. Cook, stirring occasionally until eggs just start to set. Sprinkle cheddar cheese and Monterey Jack cheese over eggs. Cover, and continue to cook until eggs are set and fully cooked.
