Ingredients For farmer's market omelet

2 lgeggs,beaten

1 Tbspricotta cheese,whole milk

1/8 chalf and half,fat free
-
1/4 mdzucchini
-
1 lgmushroom,sliced
-
1/4 smbell pepper,any color
-
1 Tbspshallots,chopped

1 Tbspparsley, italian,chopped

1 pinchsalt and pepper
-
2 slicebutter,plus one teaspoon olive oil for frying the omelet

1/4 cgrated cheese
How To Make farmer's market omelet

1Begin by combining the eggs,ricotta,half and half,salt,pepper in a mixing bowl.

2Using half of the butter and half of the oil in a non-stick frying pan, saute the shallots,then the rest of the vegetables until just tender,remove to a separate bowl.

3Add the remaining butter and oil,once that has melted add the egg mixture,using a rubber spatula,slowly start to cook the eggs until they are almost set. Spread the vegetable mixture all over the top of the eggs and sprinkle with cheese,now fold it over in half. Ola-la! You just made a farmer's omelet! Enjoy!! :)
