Ingredients For corned beef hash over spinach cakes

  • 1 c
    whole milk
  • 1 lg
    egg
  • 1 c
    frozen spinach thawed and squeezed
  • 1/3 c
    chopped green onion
  • 1 c
    flour
  • 1 tsp
    baking powder
  • pinch of salt and pepper
  • 1 c
    cheddar cheese
  • TOPPING
  • 4
    fried eggs optional
  • 2 c
    prepared corned beef hash

How To Make corned beef hash over spinach cakes

    Combine and mix first 7 ingredients, let set for 5 minutes in bowl, then add your cheddar cheese. In large skillet on med-high heat add oil or butter, when heated add 1/4 cup up batter to pan and flatted. Cook til edges start to brown and flip and cook for another 2 mins. Repeat with rest of batter.

    Top 2 cakes with 1/2 cup corned beef hash and optional fried egg.
