This sounds like a fun breakfast. I'm guessing that it could be made ahead and cooked right before serving. Found in All Time Family Favorites - Breakfast & Brunch.

Ingredients For breakfast in a loaf

scrambled eggs:

1 Tbspbutter or margarine

6eggs, lightly beaten
-
salt and pepper, to taste

loaf:
-
1round loaf, 8-9 inches
-
4 ozham slices
-
1/2red bell pepper, sliced crosswise into rings
-
1/2 cmonterey jack cheese, shredded (2 ounces)
-
1/2 ccheddar cheese, shredded (2 ounces)
-
1/2 cripe olives, sliced
-
1 mdtomato, sliced
-
8 ozmushrooms, sliced, lightly sauteed
How To Make breakfast in a loaf

1Preheat oven to 350F.

2Cut 2-inch slice from top of loaf; set aside for lid.

3Remove soft interior of loaf, leaving a 1-inch thick wall and bottom.

4Place ham in bottom of loaf.

5Top with bell pepper rings; sprinkle with half of cheeses.

6Layer Scrambled Eggs, olives and tomato over cheeses.

7Top with remaining cheeses and mushrooms.

8Place lid on loaf. Wrap in foil. Place on baking sheet.

9Bake about 30 minutes or until heated through.

10Cut into 8 wedges.
