My Fitness Pal has some wonderful and easy recipes for low calorie and high protein breakfast. Had to share this one. Easy and good. Only 271 calories!!!

Ingredients For baked egg and ham tortillas

  • 4 sm
    corn tortillas
  • 4 oz
    reduced sodium deli ham
  • 1/4 md
    red bell pepper, chopped
  • 2 Tbsp
    shredded cheese
  • 2 lg
    eggs
  • 1/2
    fresh jalapeno, seeded and chopped (if desired)
  • enjoy with salsa, sour cream or avocado, if desired.

How To Make baked egg and ham tortillas

  • 1
    Spray baking sheet with cooking spray, lay two tortillas down, top with peppers, ham an cheese, top with second tortilla, carefully crack egg over top.

    Bake at 400F for 10-12 minutes.
