bacon and egg tacos
Another breakfast favorite at my house. You can make these ahead of time. Srap in plastic wrap and refrigerate to save time on busy mornings. Just microwave to warm before serving.

Ingredients For bacon and egg tacos

8eggs

12 (6 in.)flour tortillas

12 slicebacon, cooked crisp and crumbled

1/2 cshredded monterrey jack cheese

picante sauce or salsa (optional)
How To Make bacon and egg tacos

1Cook and crumble the cbacon. Set aside.

2Beat eggs. Place the eggs, bacon and cheese in a skillet. Cook stirring often until eggs are done and ingredients are well mixed.

3Warm the tortillas either in a skillet or in the microwave. Be sure they are just warm and still soft and bendable.

4Divide the egg mixture evenly between the 12 tortillas, placing it in the middle of each.

5Add salsa or picante if desired.

6Roll each taco. Serve warm.
