My friend stopped over this morning for coffee and.... I decided to make an FRITTATA instead of the usual coffee cake to serve her. She loved it. Now she has good nourishment as she is walking in todays IRISH PARADE! Needless to say,there was no leftovers! Feel free to add or take away what you want. 1 lgwhite baking potato
-
6-8 lgeggs
-
6 slicebacon, cooked
-
1/2 tspblack pepper ( enough salt is in the bacon)

2 smcolorful mini peppers sliced
-
1/2-3/4 csour cream
-
4 smgreen onions chopped
-
3/4 ccheddar cheese, grated or diced.

1In a 12 inch oven proof frying pan (or a cast iron skillet) cook bacon over medium low heat until crispy. Place on a paper towel -lined plate. When cool crumble into1/4 inch pieces, set aside.

2In the same pan, leave 2 teaspoons of bacon fat, reserving the rest in a small bowl. Cook potato in bacon fat over medium heat-high heat until browned and tender. Remove and let cool.

3In a bowl, beat eggs with pepper add reserved bacon pieces, and cooked potatoes.

4Preheat the oven to broil, after this is cooked on top of stove. Add the cut up mini peppers, add to the skillet and mix.

5Add cheese, and mix.

6Heat 2-3 tablespoons of the bacon grease to the skillet and heat. ADD the egg mixture, reduce heat to low, and cook 10 minutes.

7Broil for 2-3 minutes, until eggs are set. Sprinkle with green onions. Add dollops of sour cream. Serve with whole wheat buttered toast ENJOY!
