Ingredients For zucchini bake

1 1/4 lbzucchini, cut into 1/2 inch cubes

16 ozmonterey jack cheese, cubed

1/2 cmilk
-
4eggs, beaten
-
1/4 cgreen pepper, chopped

1/4 cfresh parsley, chopped

3 Tbspall-purpose flour
-
2 tspbaking powder
-
salt and pepper to taste
How To Make zucchini bake

1Cook zucchini in a small amount of boiling water 5 minutes or until crisp-tender; drain.

2Combine the zucchini and the remaining ingredients; stir well.

3Pour the zucchini mixture into a greased 13 x 9 x 2 inch baking dish. Bake, uncovered, at 350 degrees for 40 minutes or until the zucchini mixture is set and the top is lightly browned. Let stand 10 minutes before serving.
