Great way to use up zucchini from the garden. And it can be served at a brunch as well as lunch or dinner!

Ingredients For zucchini bake

  • 1 1/4 lb
    zucchini, cut into 1/2 inch cubes
  • 16 oz
    monterey jack cheese, cubed
  • 1/2 c
    milk
  • 4
    eggs, beaten
  • 1/4 c
    green pepper, chopped
  • 1/4 c
    fresh parsley, chopped
  • 3 Tbsp
    all-purpose flour
  • 2 tsp
    baking powder
  • salt and pepper to taste

How To Make zucchini bake

  • 1
    Cook zucchini in a small amount of boiling water 5 minutes or until crisp-tender; drain.

    Combine the zucchini and the remaining ingredients; stir well.

    Pour the zucchini mixture into a greased 13 x 9 x 2 inch baking dish. Bake, uncovered, at 350 degrees for 40 minutes or until the zucchini mixture is set and the top is lightly browned. Let stand 10 minutes before serving.
