1 mdred onion, finely chopped

cooking oil spray

2 ozsalami, cut into 1/2-inch pieces

1 mdred pepper, cut into 1/2-inch pieces

8 lgeggs

1/2 cheavy cream

1/2 ccoarsely grated cheddar cheese

1/2 bunchflat-leaf parsley, chopped or to taste
How To Make weekend sausage bake

1Preheat oven to 400°F. Lightly grease a 8-inch square ovenproof dish. Heat a large skillet over moderate heat. Cook and turn sausages for 4-5 mins or until cooked through. Drain on paper towels.

2Spray onion with oil. Add to pan. Saute for 3 mins. Add salami and diced pepper; cook for 4 mins more or until vegetables soften. Transfer to a medium heatproof bowl; allow to cool.

3Whisk eggs, cream, cheese and parsley in a large bowl. Stir into onion mixture. Pour into prepared dish. Top with sausages.

4Bake, uncovered, for 30-45 mins, or until mixture is set. To serve, cut bake into slices.
