Yum! Each bite of this easy casserole is like eating a whole breakfast in one mouthful. It's filled with everything you love at breakfast - eggs, sausage, ham, potatoes, onions, peppers, and cheese. Lots of cheese! We really liked this hearty breakfast. Tasty and easy to prepare, enjoy this for breakfast or dinner.

Ingredients For sunday easy breakfast casserole

  • 10-12
    eggs, beaten
  • 1lb
    sausage
  • 1 c
    diced ham (any kind)
  • 4 md
    potatoes, cut into small cubes
  • 1 md
    onion, diced
  • 3
    mini peppers, diced
  • 2 c
    shredded cheddar cheese
  • 1 Tbsp
    minced garlic
  • 1 tsp
    pepper

How To Make sunday easy breakfast casserole

  • Whisking eggs in a bowl.

    Beat eggs together and set aside.
  • Browning sausage in a skillet.

    In a large frying pan cook up the sausage. Drain fat.
  • Ham, potatoes, peppers, onion, and seasonings added to skillet.

    Add the rest of the ingredients to the pan. Cook for 8 minutes.
  • Meat mixture poured into baking dish, with egg and cheese.

    Transfer frying pan ingredients to 13 x 9 casserole dish. Cover with egg mixture top with cheese.
  • Baking breakfast casserole in the oven.

    Cook at 420 degrees for 25 minutes.
