It’s a lazy Sunday afternoon, and you have a few houseguests to feed for breakfast. You want something easy, and impressive. Well, how about some spicy hash browns with sausage, egg and cheese. The cool thing is that once you make the hash brown crust, you can choose to fill it with whatever you desire. So, you ready… Let’s get into the kitchen.

Ingredients For spicy hash-brown crust with eggs, cheese & sausage

- THE HASH BROWN CRUST

1 mdrusset potato, shredded

1 pinchcayenne pepper

1 pinchground cumin
-
1 pinchsweet paprika
-
salt, kosher variety, to taste

black pepper, freshly ground, to taste

1 Tbspsweet butter, unsalted, melted

1 Tbspyellow onion, finely chopped
- THE FILLING

3 ozground chorizo, or breakfast sausage
-
2 ozcolby or cheddar cheese, shredded

1 lgfresh egg
How To Make spicy hash-brown crust with eggs, cheese & sausage

1PREP/PREPARE

2Gather your ingredients.

3Add the chorizo, or breakfast sausage to a skillet over medium heat, and cook until it is no longer pink.

4Drain on paper towels and reserve.

5Add the shredded potatoes to a mixing bowl, and then add the onions, cayenne, cumin, paprika, butter, salt, and pepper.

6Chef’s Tip: Make sure that you remove as much moisture from the shredded potatoes as possible.

7Gently mix together.

8Place a rack in the bottom position, and preheat the oven to 425f (220c).

9Add the hash brown mixture to an ovenproof dish, and make a depression in the middle.

10Chef’s Note: I’m using a mini spring-form pan; however, you could use a standard 4.5-inch (11.5cm) white ramekin, and serve it directly in the dish.

11Add the dish to the oven, and bake until the tops of the hash browns begin to turn golden, about 30 to 40 minutes.

12Remove from the oven and allow it to cool for 5 minutes.

13Add half the chorizo, or sausage to the bottom.

14Add half the cheese.

15Crack the egg into the depression.

16Sprinkle with the remaining cheese, and meat.

17Return to the oven for 8 to 12 minutes, or until the whites are set, and the cheese is bubbly.

19Serve while still nice and hot. Enjoy.
