It’s a lazy Sunday afternoon, and you have a few houseguests to feed for breakfast. You want something easy, and impressive. Well, how about some spicy hash browns with sausage, egg and cheese. The cool thing is that once you make the hash brown crust, you can choose to fill it with whatever you desire. So, you ready… Let’s get into the kitchen.

Ingredients For spicy hash-brown crust with eggs, cheese & sausage

  • PLAN/PURCHASE
  • THE HASH BROWN CRUST
  • 1 md
    russet potato, shredded
  • 1 pinch
    cayenne pepper
  • 1 pinch
    ground cumin
  • 1 pinch
    sweet paprika
  • salt, kosher variety, to taste
  • black pepper, freshly ground, to taste
  • 1 Tbsp
    sweet butter, unsalted, melted
  • 1 Tbsp
    yellow onion, finely chopped
  • THE FILLING
  • 3 oz
    ground chorizo, or breakfast sausage
  • 2 oz
    colby or cheddar cheese, shredded
  • 1 lg
    fresh egg

How To Make spicy hash-brown crust with eggs, cheese & sausage

    Gather your ingredients.

    Add the chorizo, or breakfast sausage to a skillet over medium heat, and cook until it is no longer pink.

    Drain on paper towels and reserve.
  • 5
    Add the shredded potatoes to a mixing bowl, and then add the onions, cayenne, cumin, paprika, butter, salt, and pepper.

    Chef’s Tip: Make sure that you remove as much moisture from the shredded potatoes as possible.

    Gently mix together.

    Place a rack in the bottom position, and preheat the oven to 425f (220c).

    Add the hash brown mixture to an ovenproof dish, and make a depression in the middle.

    Chef’s Note: I’m using a mini spring-form pan; however, you could use a standard 4.5-inch (11.5cm) white ramekin, and serve it directly in the dish.

    Add the dish to the oven, and bake until the tops of the hash browns begin to turn golden, about 30 to 40 minutes.

    Remove from the oven and allow it to cool for 5 minutes.

    Add half the chorizo, or sausage to the bottom.

    Add half the cheese.

    Crack the egg into the depression.

    Sprinkle with the remaining cheese, and meat.

    Return to the oven for 8 to 12 minutes, or until the whites are set, and the cheese is bubbly.
