4 mdsausage patties or your favorite healthy substitute

2 lgeggs
-
2 ccooked grits
-
1/2 smonion, chopped

1/2 smtomato, chopped

2 cMexican blend shredded cheese

2 dashsalt (to taste)

2 dashpepper (to taste)

2 dashgarlic powder

1 Tbspbutter or substitute
How To Make southern sausage egg casserole

1/2 cup of grits yields 2 cups of cooked grits.

1Preheat oven to 350 degrees.

2In a separate pot, cook grits approx 20 minutes, adding butter and salt to taste.

3Cook sausage patties in pan on medium-high heat. After cooking sausage patties, chop them up in bite-size pieces.

4Add chopped onion, saute until soft.

5In a bowl, break eggs and stir well with fork.

6In a 9x13 baking dish, layer sausage, onions, chopped tomato, and shredded cheese. (in that order)

7Stir in grits and add eggs.

8Stir.

9Put in oven at 350 for 30 minutes. Take out and let set for 5 minutes.
