Simple yet easy, effective and filling. :) This was a thrown together meal with a little bit of everything that we had leftover in the fridge. Turned out delicious. Feel free to improvise, throw in ham or chopped up bacon or sausage. Be creative and leave comments to let me know how you made it better!

Ingredients For simple homefries

1 lgpotato

1/4 conions

1egg per person
-
1/2tomato
-
cheese, shredded (optional)

salt and pepper, to taste

garlic powder, to taste

cooking oil

buttered toast
How To Make simple homefries
-
1i usually boil the potato(es) the night before so i can skin them and have them ready for cooking in the morning,

2Dice your potato, onion and tomato

3Heat 2 tablespoons of oil in a skillet

4Put potatoes in the heated oil and allow them to brown
-
5Throw in onions when the potatoes are almost done browning
-
6Allow onions and potatoes to saute while you scramble eggs in a bowl

7Pour in scrambled eggs and mix potatoes and onions in while cooking

8Put tomatoes in at the last minute, just to warm them

9Sprinkle shredded cheese, salt, pepper and garlic into mix. Allow cheese to melt

10Pour mix over buttered toast and enjoy :)
