This is a great Keto/Low Carb egg bake that stands out from the typical ones because of the use of Rotel's. It's delicious and filling and great on it's own or served with a veggie or salad.

Ingredients For sausage rotel egg bake

  • 1 lb
    jimmy dean spicy ground sausage
  • 2 can
    rotel's green chili's and tomatoes, very well drained
  • 9
    eggs
  • 2 c
    grated cheddar cheese (or your choice)
  • 1 c
    heavy cream
  • 3-4
    green onions
  • to taste
    salt and pepper

How To Make sausage rotel egg bake

  • 1
    Preheat oven to 375
  • 2
    Cook ground sausage and drain well then transfer to a casserole dish or pan.

    Top sausage with Rotel’s. (drain really well)

    Beat eggs with heavy cream, salt and pepper.

    Pour eggs over sausage and Rotel.

    Sprinkle on green onions and cheese.

    Bake for 30-45 minutes depending on the depth of your pan. We did 45 min because our pan was so deep.

    Let set up for 5 min before serving.
