This is a great Keto/Low Carb egg bake that stands out from the typical ones because of the use of Rotel's. It's delicious and filling and great on it's own or served with a veggie or salad.

1 lbjimmy dean spicy ground sausage

2 canrotel's green chili's and tomatoes, very well drained

9eggs
-
2 cgrated cheddar cheese (or your choice)

1 cheavy cream
-
3-4green onions

to tastesalt and pepper
How To Make sausage rotel egg bake

1Preheat oven to 375

2Cook ground sausage and drain well then transfer to a casserole dish or pan.

3Top sausage with Rotel’s. (drain really well)

4Beat eggs with heavy cream, salt and pepper.

5Pour eggs over sausage and Rotel.

6Sprinkle on green onions and cheese.

7Bake for 30-45 minutes depending on the depth of your pan. We did 45 min because our pan was so deep.

8Let set up for 5 min before serving.
