Home made pancakes that are quick and delicious and even good for you! Sometimes I drop cheddar cheese, chopped ham and canned or cooked mushrooms into the pancake's raw side before flipping. These can be good for brunch also.

Ingredients For oatmeal pancakes

  • 2 c
    oats
  • 2 c
    buttermilk
  • 2
    large eggs beaten
  • 1/4 c
    vegetable oil
  • 1 tsp
    vanilla extract
  • 1/4 c
    brown sugar, firmly packed
  • 1/2 c
    flour
  • 1 tsp
    each of baking powder & soda
  • 1/4 tsp
    salt
  • 1 tsp
    cinnamon

How To Make oatmeal pancakes

    Combine the oats, buttermilk, eggs, oil and vanilla and let stand covered 30 minutes to overnight in the ref.

    Combine the dry ingredients, break up any lumps. Combine with the liquid and don't over beat.

    Cook on medium heat on lightly oiled grill. Turn once the top has formed dry edges & bubbles appear. Place in warm oven (200 degrees) till serving. Serve immediately when possible.
