min's breakfast pie

My mom made quiche w spinach in it, but my kids are picky, so I made it kid friendly...my kids love it! Great for breakfast or brunch. Filling, a family favorite! Sausage can be substituted, but I find the ham much quicker!

Ingredients For min's breakfast pie

    store bought pie crust
  • 4 oz.
    ham, smoked and deli-sliced, chopped
  • 2
    scallions
  • 10-12
    large eggs
  • salt and pepper to taste
  • 1/4 tsp
    cumin, opt.
  • 1 1/2 c
    sharp cheddar cheese
  • 1/2 c
    buttermilk

How To Make min's breakfast pie

    Preheat oven to 400 degrees. Place room temp pie crust in glass pie pan, crimp edges, then using a fork, poke bottom of crust several times. ( I like to put pan in oven as its preheating for about 10 min., while I prepare other ingredients, to give the bottom of the crust a chance to bake a little before adding the wet ingr.)

    In a medium mixing bowl, add 12 eggs, buttermilk, salt, pepper, & cumin, whisk well. Cut the ham and scallions, add to bowl. take 1 cup of the cheese and add to bowl. Give all the ingredients another quick whisk, then add egg mixture to the pie pan. Top with remaining cheese. Place in oven, uncovered for 30 min. Let cool 5 minutes, enjoy!
