I really love cooking... (especially breakfast). So I worked this casserole into an anytime dish.... I love making it for dinner and so does my family...... Enjoy!!!!!

Ingredients For kat's breakfast casserole

  • 6 c
    frozen hash browns
  • 1/2 c
    onion (diced)
  • 2 c
    cheddar cheese
  • 12 oz
    bacon or turkey bacon (crumbled)
  • 12 oz
    evaporated milk
  • 3 lg
    eggs
  • 1 1/2 tsp
    salt
  • 1 tsp
    black pepper

How To Make kat's breakfast casserole

    PREHEAT oven to 350° F. Grease 13x9 baking dish.

    Layer 1/2 potatoes, 1/2 onion, 1/2 bacon and 1/2 cheese in prepared baking dish; repeat layers. Combine evaporated milk, eggs, salt, and pepper in small bowl. Pour evenly over potato mixture; cover.

    BAKE for 50 to 55 minutes. Uncover; bake for an additional 5 minutes. Let stand for 10 to 15 minutes before serving.
