Ingredients For italian brunch casserole

  • 8 oz
    package sweet italian sausage
  • 8
    green onions, sliced (1 cup)
  • 1/2 tsp
    salt
  • 2
    zucchini diced (3 cups)
  • 1/2 tsp
    pepper
  • 7 oz
    jar roasted red bell pepper, drain and chop
  • 16 oz
    italian bread loaf, cut into 1" cubes (8 cups)
  • 8 oz
    shredded sharp cheddar (2 cups)
  • 6 lg
    eggs
  • 1 1/2 c
    milk

How To Make italian brunch casserole

  • 1
    Remove and discard casings from sausage. Cook in large skillet, stirring until sausage crumbles and is no longer pink. Drain. Add onion, zucchini, salt and pepper to skillet. Saute 4 min or until vegetables are tender, stir in peppers. Drain and cool. Spread 4 c bread crumbs in lightly greased 9x13. Top with half sausage mix and half cheese. Repeat. Whisk together eggs and milk, pour over bread. Cover and chill 8 hours. Bake, covered, at 325 degrees for 1 hour or until bubbly and hot.
