I made grilled cheese sandwiches for dinner, and ended up with one left over. The next morning I found it still sitting on the counter, wrapped in a paper towel. I couldn't just throw it away, so I got creative! The resulting casserole was surprisingly tasty. I served it with sausage and fresh fruit and it made one very satisfying meal!

Ingredients For grilled cheese, potato and egg casserole

1grilled cheese sandwich

6eggs
-
1 cshredded potatoes

1/2 tspsalt

1/4 tspblack pepper

1 Tbspdried, minced onion

2 slicecheddar cheese

2 Tbspwater
How To Make grilled cheese, potato and egg casserole

1Whisk together the eggs, onion, salt, pepper, and water.

2Cut sandwich into small cubes.

3Add sandwich cubes and potato shreds to egg mixture and mix lightly.

4Pour into greased casserole dish (I use a 1 1/2 quart round casserole dish).

5Cover and bake at 375 degrees for 40 minutes.

6Remove cover, top with slices of cheddar cheese. (I use the thin slices for sandwiches. You could use 1/2 cup of shredded cheese instead.)

7Return to oven, and bake uncovered until cheese melts, about 5-10 minutes.
