green chile bacon strata

I love finding a basic recipe and then making it my own. My mother was a fabulous cook but, passed away when I was only 23 and just married. She made almost everything without a recipe. So, when she passed, I could only guess how she made her wonderful dishes. Let this be a lesson to you, teach your kids how to make your dishes! Anyhow, she didn't leave me with her recipes but she did leave me with the love of cooking and baking. When I made this dish, I didn't really measure anything but I'm going to do my best to guess and SHARE! :)

Ingredients For green chile bacon strata

  • 5 - 6 slice
    bread, i used 100% whole grain for this recipe but you can use most types of breads, even english muffins
  • 1 c
    crumbled bacon, i love using the ready crumbled bacon. (hormel)
  • 8
    eggs
  • 3/4 c
    sour cream (reg. lite or fat free)
  • 1/2 c
    milk, you can use a low fat but..2% or higher is better.
  • 1/2 tsp
    ground cumin or to taste
  • 1/2 tsp
    garlic salt or to taste
  • 1/2 tsp
    pepper (i like fresh ground)
  • 7 oz can
    diced green chile's
  • 8 oz
    mexican blend shredded cheese or what ever you have.
  • MARINATED TOMATOES
  • 6
    roma tomatoes chopped
  • 1/2 bunch
    cilantro (fresh, appx 1 cup, chopped)
  • 1/2 tsp
    garlic salt ( i also add a little garlic powder)
  • 1/2 tsp
    fresh ground pepper
  • 1 tsp
    ground cumin
  • 1 dash
    cayenne pepper (to taste, or eliminate)
  • 1/4 c
    finely chopped onion (optional)

How To Make green chile bacon strata

    Tear up bread into 1.5 inch size, cover the bottom of the (non stick sprayed) baking dish. Top with crumbled bacon.

    In a bowl, add eggs, sour cream, milk, green chili's and spices. Beat until the sour cream is no longer visible.

    Pour egg mixture over the top of the bread and bacon (use a fork and make sure all bread is covered by pushing it down into the eggs, if you find you don't have enough egg mixture to the bread, just beat up a couple more eggs and milk and add it to the dish and mix it around a little) , top with cheese and bake uncovered preheated oven at 350 for appx 45 mins. +-.(make sure the middle isn't still runny, might need to cook a little longer) Let sit for 10 mins. and serve! Top with Marinated tomatoes and sour cream...oh yum!

    Makes for great left overs or you can store it in the refrig. unbaked for a day until you're ready to bake it. Remember, I make this without measuring but this is pretty close. You can change it up and use other types of meat or no meat, add cilantro to the eggs etc. It's just a fun recipe to play around with.
