This makes a really nice brunch quiche - goes great with a nice green salad for a light lunch or other breakfast dishes for breakfast.

Ingredients For green chile & egg breakfast casserole

5eggs
-
2 Tbspbutter, melted
-
1/4 cflour
-
1/2 tspbaking powder
-
18 oz. carton cottage cheese
-
2 cmonterey jack cheese, shredded
-
1 can4-oz. can chopped green chilies, drained

1tomato, sliced
-
salsa and/or sour cream for topping
How To Make green chile & egg breakfast casserole

1Combine the eggs, butter, flour and baking powder - mix well.

2Stir cheeses and chilies into mixture.

3Pour mixture into a well greased quiche dish and bake in a 400 degree oven for 10 minutes.

4Slice tomato and place on top of quiche and return to the oven. Reduce heat to 350 degrees and bake an additional 20 minutes.

5Serve with salsa and sour cream.
