This is a favorite of my entire family. It is easy enough to double the recipe, and it reheats for a quick leftover when in a hurry.

Ingredients For green breakfast burritoes

12-18eggs
-
small pkgjimmy dean sausage{ground)

2 smtomatoes
-
1/2 csour cream
-
1/2 canminced jalepenos
-
16 ozmonterey jack cheese
-
small cansliced olives
-
1 pkgmedium flour tortillas

1 canchili verde green sauce
How To Make green breakfast burritoes

1Beat eggs and scramble in large skillet that has been coated with cooking spray. When slightly runny add Sour cream and finish cooking.

2In another skillet brown package of Jimmy Dean sausage.

3Dice tomatoes and add to sausage. Also add 1/2 can of minced jalepenos to the sausage.

4Add sausage mixture to the egg mixture and blend well together. Spoon generously into warmed tortillas one at a time. Fold up the bottoms then roll into a burrito and place in a large baking pan that has been coated with cooking spray.

5Place burritos close together with open end on the bottom of the pan.

6Sprinkle sliced olives over top of burritos.

7Pour can of green chili verde sauce over burritos and make sure they are completely covered.

8Sprinkle cheese over all the top and loosely cover with foil.

9Bake in 350 preheated oven for 25-30 minutes.
