Lazy weekend breakfast or brunch? Satisfy your late morning start with this easy, elaborate and exceptionally exquisite frittata. Hunky hubby asked me to make him something to go with grits. Hunting through the fridge I found all the treasures needed to whip together this beautiful frittata. It's so easy! Put it together, throw it in the oven, clean up the kitchen, get out of your P.J.s, and jump into the shower. By the time you're dressed the frittata is ready and all you need to do is make the grits and toast. Wha-la!!! Simple as that, you are a hero.

Ingredients For frittata sherry's way

8-10 slicecanadian bacon

3 smsweet peppers (like you get in a bag)

1/4 conion, diced

3 lgwhite mushrooms, rough chop

2-3green chiles, minced fine (or use a small can of diced)

2 Tbspparsley, rough chop

1 tspfresh chives
-
6eggs, beat well with milk
-
1/2 cmilk
-
salt and pepper

1 cgrated cheese (i used cojack). reserve 1/4 cup or more for topping after it is baked.
How To Make frittata sherry's way

1Cut the bacon into cubes, chop the onions, mince the chile, dice the sweet peppers, rough chop the mushrooms and parsley, mince the chives, and grate the cheese.

2In a large mixing bowl, beat the eggs and milk with a whisk until frothy. Add salt and pepper.

3Tumble in all the ingredients into the egg/milk mixture and mix well. Grease or oil a cast iron skillet or oven-proof skillet. Pour in the frittata mixture.

4Set the timer for 40 minutes. Take out....add the 1/2 cup or more of cheese to the top. Put a lid on it and let it melt. No need to put it back in the oven. After 5-10 minutes (enough time to make toast and/or grits), lid off and plate.
