Found this in a Food and Family magazine. I love a good spinach quiche with lots of cheese.

Ingredients For four cheese quiche

  • 1 c
    sliced mushrooms
  • 1 c
    chopped onions
  • 1 pkg
    (10oz.) frozen chopped spinach, thawed and drained
  • 1/3 c
    miracle whip (i use mayonaise)
  • 1/3 c
    milk
  • 4
    eggs
  • 1 c
    krafts shredded mozzarella cheese ( i use 1/4 cup of 4 different cheeses)
  • 1
    frozen pie shell
  • 1/4 c
    bacon bits, or cooked bacon

How To Make four cheese quiche

    Preheat oven to 375.
  • 2
    Spray nonstick skillet with cooking spray. Add mushrooms and onion; cook 5 minutes or until tender. Stir in spinach; mix well.

    TO QUICKLY THAW FROZEN SPINACH, PLACE PACKAGE IN COLANDER IN SINK. RUN HOT WATER OVER SPINACH UNTIL THAWED; PRESS OUT ANY EXCESS FLUID.

    Mix dressing, milk, and eggs until well blended. Add spinach mixture and cheese.

    Pour into pie shell; sprinkle with bacon bits. Bake 50 minutes or until set and golden.
