I love this casserole w/ the spinach, it tastes sooo good! I usually make it as a Sunday brunch meal.

Ingredients For florentine casserole

  • 1 lg
    potato, diced
  • 12
    eggs
  • 1 c
    reduced-fat, shredded cheddar cheese
  • 1/2 c
    grated parmesan cheese
  • 1/2 tsp
    salt
  • 1/2 tsp
    nutmeg
  • 1/4 tsp
    pepper
  • 2
    10 oz pkgs frozen, chopped spinach, thawed, squeezed dry
  • 2 oz
    canadien bacon, finely chopped

How To Make florentine casserole

  • 1
    Place potatoes in a microwaveable bowl. Cover w/ water. Cover bowl and microwave 5 min, drain. Heat oven to 375. Spray a 9" x 13" baking pan w/ cooking spray.

    In lg bowl, whisk together eggs, cheese, salt, nutmeg and pepper. Stir in spinach and potatoes.

    Pour egg mix into baking pan. Sprinkle w/ bacon. Bake 40 mins, or until set in center.
