I love this casserole w/ the spinach, it tastes sooo good! I usually make it as a Sunday brunch meal.

Ingredients For florentine casserole

1 lgpotato, diced

12eggs
-
1 creduced-fat, shredded cheddar cheese

1/2 cgrated parmesan cheese

1/2 tspsalt
-
1/2 tspnutmeg
-
1/4 tsppepper
-
210 oz pkgs frozen, chopped spinach, thawed, squeezed dry

2 ozcanadien bacon, finely chopped
How To Make florentine casserole

1Place potatoes in a microwaveable bowl. Cover w/ water. Cover bowl and microwave 5 min, drain. Heat oven to 375. Spray a 9" x 13" baking pan w/ cooking spray.

2In lg bowl, whisk together eggs, cheese, salt, nutmeg and pepper. Stir in spinach and potatoes.

3Pour egg mix into baking pan. Sprinkle w/ bacon. Bake 40 mins, or until set in center.
