1 cartichoke hearts, chopped

1/4 cparmesan cheese, grated

1 cmonterey jack cheese, shredded

1 ccheddar cheese, shredded

6eggs

8 ozsour cream
How To Make fiesta omelet

1Grease 10-inch quiche dish.

2Spread salsa on the bottom.

3Distribute chopped artichokes evenly over salsa.

4Sprinkle parmesan cheese over the artichokes.

5Sprinkle Monterrey jack and cheddar cheese over all.

6Place eggs in blender or food processor and blend until smooth.

7Add sour cream and blend.

8Pour egg mixture over the cheeses.

9Bake uncovered in 350F oven for 30-40 minutes or until set.
