I don't remember where I got this recipe, but it sure is good! I make this on Thanksgiving and Christmas morning when we won't be eating lunch. It also great to serve when having overnight guests.

Ingredients For farmer's casserole

3 cfrozen shredded hash brown potatoes
-
3/4 cshredded monterey jack cheese with jalapeno peppers

1 cdiced fully cooked ham or canadian bacon

1/4 csliced green onion
-
4beaten eggs
-
12 ozevaporated milk
-
1/4 tsppepper
-
1/8 tspsalt
How To Make farmer's casserole

1Grease an 8x8 inch baking dish. Arrange potatoes evenly in the the bottom of the dish. Sprinkle with cheese, ham and green onion.

2In a medium mixing bowl combine eggs, milk , pepper and salt. Pour egg mixture over potato mixture in dish. (You can cover the dish and refrigerate overnight).

3Bake, uncovered, in a 350 degree oven for 40 to 45 minutes (or 55 to 60 minutes if it was made ahead and refrigerated) or until center appears set. Let stand 5 minutes before serving.
