I got the idea when we visited a B&B, their recipe was very basic just eggs, & cheese! I added a LOT of stuff to it and made it my own.

Ingredients For egg & sausage fritatta

  • 1 lb
    sausage, i like jimmy dean w/ sage
  • 10
    eggs
  • 1 c
    milk
  • 1/2 c
    feta cheese
  • 1/2 c
    parmesan regiano cheese
  • 4 Tbsp
    basil, fresh
  • 1/2 c
    baby spinach, fresh
  • 8-10
    shallots or 1 large white onion
  • 6
    pegs garlic
  • 1 1/2 tsp
    pepper, freshly ground
  • 1 Tbsp
    onion powder
  • 1 Tbsp
    garlic powder
  • 2 Tbsp
    mccormick garlic & herb seasoning, (no salt)
  • GARNISH: ON SIDE OF PLATES
  • avocado slices
  • chopped tomatoes
  • sour cream

How To Make egg & sausage fritatta

    Cook SAUSAGE, & drain well. I cook it in microwave. Place between napkins and press out the extra oil.

    Peel & chop SHALLOTS or ONIONS. Smash GARLIC, peel & chop into very fine pieces.

    Rinse BASIL leaves, chop. Remove stems, rinse SPINACH and chop.

    Beat EGGS and MILK together. Add SPICES & beat well. Stir in all other ingredients.

    Spray 2 baking dishes divide egg mixture evenly. Do NOT cover. Bake 350 30 - 40 minutes.
