This is one of the best egg bakes I've ever put together. The combination of ham, potatoes, spinach and the sharp cheddar cheese was just awesome. It was so easy too, the longest part of putting together was the browning of the potatoes. If ever wanting a delicious breakfast bake to impress guests, this would be it. I will be serving this one Christmas morning, as it makes for a beautiful presentation. Yum! Great to Church brunch as well. Enjoy!

- EGG MIXTURE

1/2 cmilk

1/4 cheavy cream
-
1 tspsalt

1/4 tsppepper

1 Tbspparsley paste
- POTATO MIXTURE

oilfor browning potatoes

1 bag28 - 30 ounce - o'brien frozen potatoes - thawed

1/4 - 1/2 tubered pepper flakes - optional

1/2 mdonion, chopped
-
1/4 tsppepper
-
sprinklingseason salt or to taste - i sprinkled to cover top of potatoes - about 1/2 - 3/4 teaspoon

8 ozcooked ham, cubed
- TOPPINGS

1/2of a 10 ounce bag of baby spinach, chopped large

2 ozcooked, cubed ham

8 ozblock, sharp cheddar cheese, shredded - divided

1 Tbspdried parsley flakes

2 lgroma tomatoes, sliced
How To Make ~ delicious brunch bake ~

1In a large skillet over medium heat - add 2 - 3 tablespoons oil. Once hot, add potatoes, 8 ounces of the ham, onion, season salt, red pepper flakes if using, pepper - cook until browned, stirring occasionally and add more oil as needed.

2Preheat oven to 350 degree F. Grease a 9 x 13 baking dish. In prepared dish, evenly spread out the potatoes. Sprinkle with spinach, evenly.

3Sprinkle with remaining ham and 2 cups of shredded cheese, evenly.

4In a large bowl, blend eggs with parsley paste, milk, cream, salt and pepper to taste. Beat well, then pour evenly over spinach. Evenly place tomatoes on top and sprinkle with remaining cheese. Sprinkle with 1 tbsp dried parsley flakes.

5Place in oven and bake for 40 - 45 minutes or until all egg is visibly cooked.

6I let set up for 5 minutes before cutting. Cut into individual serving and enjoy!
