Ingredients For easy veggie frittata

4eggs
-
1 Tbspchopped fresh parsley - or - 1 tsp. dried
-
1/2 tspdried oregano
-
1/4 tspgarlic salt
-
1 pinchblack pepper
-
1 Tbspwater
-
2 tspbutter
-
2 mdscallions, chopped
-
1/2 cchopped broccoli - or - asparagus - or - green beans

1/2 cchopped celery
How To Make easy veggie frittata

1In a medium bowl, whisk together eggs, parsley, oregano, garlic salt, pepper and 1 Tbsp. water.

2In a heavy skillet, melt butter over medium heat. Saute scallions, celery and vegetables for 4 to 5 minutes or until crisp-tender.

3Pour egg mixture over vegetable mixture and cook for 30 seconds. Cover and cook for 2 to 3 minutes or until set.

4Cut frittata in half and slide onto warmed plates.
