I just made this creation this morning! It was so easy to make, hence the name and so delicious! I just had to share it!

Ingredients For easy peasy pico frittata

  • 6
    eggs, 2 yolks removed, if desired
  • 1/2 c
    pico de gallo, fresh
  • 1/2 c
    milk, low-fat
  • 1 c
    cheddar/jack cheese, shredded & divided in half
  • salt & pepper, to taste
  • TOPPING / GARNISH
  • 2-4 Tbsp
    sour cream
  • 2-4 Tbsp
    salsa, my favorite - pace picante sauce, medium hot
  • 1
    avocado

How To Make easy peasy pico frittata

    Crack 6 eggs and put in medium bowl, separate 2 of the eggs, removing 2 yolks and discard. You may use all 6 if you like, I just cut down the calories and cholesterol by eliminating 2 yolks.

    Add 1/2 cup milk to the eggs and beat until blended. Add 1/2 cup cheese.

    Add fresh pico de gallo (tomatoes,yellow onion, jalapeno & cilantro). I had store bought, prepackaged fresh pico for fast easy use. Stir to mix all ingredients.

    Pour egg mixture into a greased pan or baking dish and bake for 20 minutes. Remove from oven and add the other 1/2 cup cheese to the top. Place back in oven for 5 minutes to melt the cheese.

    Garnish with sour cream, avocado and salsa. Enjoy!
