If you're cooking for a crowd, this recipe fits the bill! Great for a holiday morning! Optionally, you add sauteed mushrooms. If you don't like crustless quiches, you can add a crust.

3/4 cmilk

1 tspkosher salt

1 tspblack pepper

1/2 tspred pepper flakes

1 Tbspunsalted butter

2 tspolive oil

1 mdsweet onion, diced

1green bell pepper, diced

1red bell pepper, diced

6 ozham, diced

1 cspinach, chopped

1 csharp cheddar cheese, grated
How To Make denver "omelette" quiche

1Butter a 9 inch deep dish pie pan. (or can use spray). Preheat oven to 375F.

2Place the eggs, milk, salt, pepper and red pepper in a bowl. Whisk to combine. Set aside.

3In a large skillet, melt the butter. Add the olive oil. Heat and then add the onions and bell peppers. Saute for about 4 minutes, until softened. Scrape into a large bowl.

4Add the ham, spinach, and cheese to the pepper mixture. Stir to combine. Add the egg mixture. stir to combine. Pour into the prepared pie dish.

5Bake, uncovered for about 60 minutes, until the eggs are set. If it begins to brown too much, tent with foil.

6Remove from oven and let rest for 5-10 minutes before slicing. Can garnish with green onions and sour cream.
