Ingredients For crustless asparagus quiche

8 ozasparagus (cut in 1" pieces and cooked)

6 lgeggs

2-1/4 cshredded mozzarella cheese, reserve 1/4 c.

2 clovegarlic
-
salt & pepper to taste

2 cbaby spinach leaves

2 Tbspparmesan cheese, canned grated
How To Make crustless asparagus quiche

1Grease a 9-inch pie pan. Microwave asparagus pieces until cooked.

2Beat all six eggs and reserve 1/4 cup.

3Combine eggs, 2 cups mozzarella, garlic, salt, pepper, and spinach. Pour into prepared pie pan.

4Layer asparagus on top of egg mixture in pan. Pour reserve 1/4 cup egg on top. Sprinkle remaining 1/4 cup mozzarella and parmesan cheese on top.

5Bake at 375 degrees F for about 30 minutes or until edges start to brown.
