Making a large quiche and either sharing with others, or having left-over's for days, is a great way to start your daily breakfast. I make mine without a crust to cut back on the bread intake. And all the vegetables included make this a delightfully tasty and healthy meal.

Ingredients For crust-less quiche

2 cspinach, chopped
-
1/2 czucchini, chopped
-
1/2 cyellow squash, chopped

1/2 cred bell pepper, chopped

1/4 conion, chopped

1 cprovolone cheese, chopped

1 tspred pepper flakes
-
8-10eggs
-
1/4 tspgarlic salt
-
1/4 tsppepper
-
3 Tbspflour
-
spray olive oil
How To Make crust-less quiche

1Preheat oven to 375 degrees. Spray 9x13 baking dish with olive oil cooking spray.

2Combine the first 7 ingredients in a large bowl. Mix well. Spoon this mixture into the bottom of the baking dish.

3Whisk together the next 5 ingredients. Then pour the egg mixture over the top of the vegetables.

4Bake 30-35 minutes or until center is set (a knife inserted in the center will come out clean). Let stand for 5 minutes before serving.
