This is a very different breakfast/brunch casserole and it's delicious! The lemon really helps the crab flavor shine through. It complements the tang and a bit of heat you get from the half and half, mayo, and cheese mixture. If you like crab, add this easy breakfast casserole to your next brunch menu.

2 TbspDijon mustard

6English Muffins

1 cancrabmeat, drained (8 oz)

2 Tbsplemon juice

2 tsplemon zest

2 cshredded white cheddar cheese (8 oz)

12eggs
-
1 chalf and half cream
-
1 cmilk, 2%
-
1/2 cmayonnaise
-
1 tspsalt
-
1/2 tspcayenne pepper

1/2 tsppepper
-
2 cshredded Swiss cheese (8 oz)

1 cgrated Parmesan cheese
-
4green onions, chopped
-
1/4 cfinely chopped red bell pepper
-
1/4 cfinely chopped yellow bell pepper
How To Make crabby patty brunch bake

1Spread mustard over the bottom half of the muffins. Place in a greased 9x13" baking dish.

2Top with crab, lemon juice, and zest.

3Sprinkle with cheddar cheese. Top with muffin tops; set aside.

4In a large mixing bowl, whisk the eggs, cream, milk, mayonnaise, salt, cayenne, and pepper. Pour over muffins.

5Sprinkle with Swiss cheese, Parmesan cheese, onions, and peppers. Cover and refrigerate overnight!

6Remove from the refrigerator 30 minutes before baking. Cover and bake at 375F for 30 min.

7Uncover. Bake 20-25 minutes longer or until set.

8Let stand 5 minutes before serving... Enjoy!
