Ingredients For country breakfast

  • 1 lb
    smoked sausage -- chopped
  • 1/2 sm
    red onion -- diced
  • 1 sm
    red bell pepper -- diced
  • 6.5 ounce can
    mushrooms -- drained & chopped
  • 4 lg
    eggs -- beaten
  • 2 1/2 c
    velveeta cheese -- shredded

How To Make country breakfast

  • 1
    Saute the first 4 ingredients for 3 to 5 minutes on medium-high heat.

    Add beaten eggs to the meat-veggie mixture and cook until the eggs are firm.
  • 3
    Add the cheese over top and cook until the cheese is melted.
