~ cottage sausage & egg bake ~

Another great breakfast or brunch idea. I make this dish many different ways, but this is how I decided to make it this morning. My son loves cottage cheese, so decided to add it. He loved it. Its great warmed up as well.

Ingredients For ~ cottage sausage & egg bake ~

  • 1 1/2 c
    diced smoked sausage, summer sausage or kielbasa
  • 4
    eggs, beaten
  • 1/4 c
    flour
  • 1/4 tsp
    garlic powder, salt & pepper
  • 1/2 tsp
    baking powder
  • 1/3 c
    milk
  • 1
    green onion, sliced - green and white parts
  • 1 c
    cottage cheese, small curd
  • 2 1/2 c
    shredded , white sharp cheddar cheese or your favorite - divided

How To Make ~ cottage sausage & egg bake ~

    Preheat oven to 375 degree F. Grease a 9 inch pie plate. In a medium bowl, beat eggs, whisk in the flour, seasonings, milk and baking powder. Stir in 2 cups of cheese, onion, cottage cheese and sausage. Combine well.

    Pour into prepared dish. Bake for 25 - 30 minutes or until knife inserted in center comes out clean. You can serve now or sprinkle with additional cheese and place back into oven and bake until melted.

    I leave the dish set for 5 - 10 minutes, before cutting. Enjoy with some fresh fruit or as i served, with halved cherry tomatoes. Quite satisfying.
