This is an excellent dish for when you have overnight company for the holidays.

Ingredients For brunch

  • 1 pkg
    sausage, browned and drained
  • 1 3/4 c
    croutons
  • 4 oz
    pkg. shredded cheddar cheese
  • 2
    eggs
  • 1 1/2 c
    milk
  • 1/3 c
    green pepper, chopped
  • 1 can
    cream of mushroom soup
  • 1/4 c
    milk

How To Make brunch

  • 1
    Brown sausage, drain and crumble. Place croutons in a 10 x 6" dish; spread sausage and cheese over croutons.
  • 2
    Combine two eggs, 1 1/2 cups milk, 1/3 c. chopped green pepper and pour over sausage. Cover and refrigerate overnight. Blend one can Cream of Mushroom soup, 1/4 cup milk and pour over casserole. Bake at 300 degrees for 45 - 60 minutes. Let stand five minutes. Very good!!!
