A eye opening brunch dish. You can make it spicy or mild according to what kind of salsa you use. Serve w/ dollops of sour cream and a scattering of scallions.

Ingredients For brunch-style burritos

5 lgeggs
-
1/4 tspsalt
-
1/4 tspwhite pepper
-
2 Tbspbutter
-
1/4 c1% milk
-
1onion, chopped
-
1small green bell pepper
-
57" flour tortillas
-
1 cfavorite salsa
-
1 cshredded mexican-style cheese, i used reduced fat
-
sour cream and chopped scallions for garnish
How To Make brunch-style burritos

1Heat oven to 350. Lightly spray a 9" x 13" casserole dish w/ cooking spray. In lg bowl, beat eggs, milk, salt and pepper.

2In lg skillet, melt butter over medium heat. Add onions and peppers. Saute until soft. Reduce heat to med-low. Add egg mix, scramble eggs until just cooked and fluffy.

3Evenly spoon egg mix into center of each tortilla. Top w/ 1 tbap salsa. Roll up tortilla and place in casserole dish. Spoon 2 tbsp salsa on top of tortilla, sprinkle w/ cheese. Cover dish w/ foil. Bake 25 mins. Serv w/ sour cream and scallions.
