We seem to make breakfast casseroles mostly at Christmas, or for special occasions (like Victoria's Baptism, the casserole recipe is in JAP). With something so good and easy, I think we should make them much more often!

Ingredients For broccoli cheese breakfast casserole

  • 1/2 lb
    ground pork sausage
  • 1
    chopped onion
  • 10 oz
    frozen broccoli, thawed
  • 6 oz
    blend 3 cheddar cheese, divided
  • 8
    eggs, lightly beaten
  • 1 c
    ricotta cheese
  • 1/4 c
    milk
  • 1 tsp
    pepper
  • 1/2 tsp
    salt
  • 1
    plum tomato, sliced thin

How To Make broccoli cheese breakfast casserole

  • 1
    Cook sausage and onion, drain. Toss sausage, broccoli, and half cheese, spoon into lightly greased 11x7. Stir together 1/2 cheese, eggs, ricotta, milk, salt and pepper. Pour over broccoli. Sprinkle with last of the cheese and tomato. Bake at 350 degrees covered for 30 min, then 15 min uncovered. Let stand 10 min. Serve.
