we go out for breakfast every weekend, and spend a lot of money on "Skillet Meals" so I decided to make my own since my husband loves them so much. The great thing about this is you can alter it to fit your taste or what you have on hand.

Ingredients For breakfast skillet

  • 1/2 lb
    breakfast sausage
  • 1 Tbsp
    oil
  • 1/2 md
    onion, choppped
  • 1/2
    bell pepper, chopped
  • 1 can
    sliced potatoes
  • 1 jar
    sliced mushrooms
  • 6 lg
    eggs
  • 1 c
    shredded cheese

How To Make breakfast skillet

    In large skillet, brown sausage. Meanwhile, chop and prepare vegetables.

    Remove sausage from skillet, place on plate lined with paper towel to remove excess grease. In skillet, place oil, onions, bell peppers; saute for about 1 minute. Then add potatoes and mushrooms.

    Stir vegetables then let cook for 5 minutes on each side to get potatoes to desired crispness, stirring well between each side.

    Add eggs and stir in then add sausage back to skillet. top with cheese. Let cook for 1 to 2 more minutes on low until cheese is melted.
