This is a wonderful breakfast dish when cooking for 2 people and do not want to make a large breakfast casserole or quiche. I will cook up these and have one that morning and warm up the other the next day. Put what you like in these! Add chicken or spices for a Tex Mex version, add ricotta cheese or cottage cheese, meat, or no meat or each can choose ingredients or make their own. Have a little bit of this or that left over, just put it on into this to use it up for something different.

Ingredients For breakfast cups for two

1/2 cbulk turkey sausage (i like jennie o), crumbled (can use regular pork sausage, i prefer turkey)

4eggs. lightly beaten

1/4 clow fat milk

1/8 tspeach of salt and pepper

1/8 tspdry mustard

1 chashbrowns, (i make my own, but can use plain hashbrowns from frozen section)

1green onion, sliced
-
1/2 mdtomato, chopped

2 Tbspgreen bell pepper, fine dice
-
2 Tbspparmesan cheese
-
2 Tbspheaping shredded low fat cheddar cheese or low fat colby
How To Make breakfast cups for two

1Heat oven to 350°F.

2In a small skillet, brown sausage and drain. (you can also do this in the oven per directions).

3In a small bowl, beat egg, milk, and seasonings. Set aside.

4In an electric skillet, spray with butter flavored non-stick spray and cook hash browns till they become crispy. Spray 2 ramekins with non stick spray and evenly place 1/2 of the hashbrowns in a greased 8-9 oz. custard cup. Gently tap down the hash browns. Top with sausage green peppers, tomato and onion. Pour egg mixture over top. Sprinkle with cheeses.

5Bake, uncovered for 30-35 min or until knife inserted near center comes out clean. Let stand for 10 minutes.
