This my Sunday go to when you have a house full of company. You can make it the night before and pop it in the fridge. Orginally the recipe called for bread, but I love the shredded potatoes.

Ingredients For breakfast casserole

  • 12 lg
    eggs, whisked with 1/4 cup milk
  • 1 pkg
    unfrozen shredded hash brown potatoes
  • 1 sm
    onion, diced and sauted in butter
  • 1 sm
    green pepper, diced and sauted in butter
  • 2 pkg
    12 oz or larger chedder cheese, shredded
  • 1 pkg
    12 oz diced ham
  • 1 lb
    breakfast sausage or any sausage you desire, cooked.
  • 1 lb
    bacon, cooked and crumblesd

How To Make breakfast casserole

  • 1
    Place hashbrowns on the bottom of a 9x13 sprayed baking dish. Add the meat and onions and peppers.

    Add one package of cheese. Pour egg mixture over casserole.
  • 3
    Cover with foil. Bake for 45 min at 350. The center of the casserole shoud be puffy and firm. If not return to the oven for a additional 5 or 10 minutes.

    Check doneness by inserting a knife in the center. Cover with the rest of the cheese and return to the oven until cheese melts

    I serve this with gravy and biscuts on the side.
