I attended a luncheon in Portland, Maine once and sat beside Jimmy Dean at the Eastland Hotel. He was promoting his Company and his products at that time. He had a location in our city. This is his Signature recipe I made using his Jimmy Dean Regular Flavored Sausage, and this is in honor of him.

Ingredients For breakfast casserole

  • 1 pkg
    'jimmy dean' fresh sausage, regular flavor
  • 4 c
    cubed, day old bread
  • 2 c
    shredded, sharp cheddar cheese
  • 10
    eggs, slightly beaten
  • 4 c
    milk
  • 1 tsp
    dry mustard
  • 1 tsp
    salt
  • 1/4 tsp
    onion powder
  • fresh ground pepper to taste
  • 1/2 c
    mushrooms, sliced, optional
  • 1/2 c
    tomatoes, peeled, chopped (optional)

How To Make breakfast casserole

  • 1
    Place bread in well buttered 9 x 13 baking dish. Sprinkle with cheese. Combine the next six ingredients. Pour evenly over the bread and cheese. Sprinkle cooked sausage and optional ingredients over the top. Cover and chill overnight

    Let baking dish come to room temperature before baking or about 1 hour. Preheat oven to 325F degrees. Bake uncovered for about 1 hour.Tent with foil if top begins to brown too quickly.
