This recipe has become a tradition on Christmas morning the last few years. I am also asked to prepare it for a brunch every year! It's easy to make; I know you and your family will LOVE it!

Ingredients For breakfast casserole

  • 8
    eggs, beaten
  • 1/2 c
    all purpose flour
  • 1 tsp
    baking powder
  • 16 oz
    cottage cheese, small curd
  • 2 c
    shredded cheddar cheese
  • 2 c
    monterey jack cheese
  • 2 can
    chopped green chilies (4 oz cans), drained
  • 1/2 tsp
    chili powder
  • 1/2 tsp
    garlic powder
  • 1/4 c
    butter or margarine, melted

How To Make breakfast casserole

  • 1
    Combine eggs, flour, baking powder, stirring well.
  • 2
    Stir in remaining ingredients. Pour into a lightly greased 12"x9"x2" baking dish. Bake at 325 degrees for 35 minutes or until done. Enjoy!
