This dish comes from my lovely mother in law. She is an amazing cook, and I've made this every Christmas morning since my husband and I have been together. One year I added a box of frozen spinach thawed and drained. The possibilities are endless. I took it to a ladies Brunch, and couldn't get out of the place without promising to email the recipe. Enjoy!

Ingredients For bobivi's breakfast casserole

8eggs

2packages of cheese and herb croutons

2 csharp cheddar cheese

2 cevaporated milk
-
2 cmilk
-
1 tspdeli mustard
-
1 lbbacon, cooked and crumbled

1 bunchof chives chopped

salt and pepper
How To Make bobivi's breakfast casserole

1Prepare entire dish and allow to set in refrigerator overnight. I cook my bacon in a 350 degree oven on a foil covered cookie sheet for 15-20 min or until crispy enough for you. Spray a 13x9" baking dish with cooking spray. Sprinkle croutons evenly over bottowm of dish. Crumble bacon and sprinkle over croutons, then cover with cheese and finally chives. Wisk together eggs, milk, mustard, salt and pepper. Pour egg mixture evenly over croutons. Cover with foil and refrigerate overnight.

2Next morning Preheat oven to 325 degrees and bake covered for 45 min. Remove foil for last 15 minutes. Insert knife into the center to make sure egg mixture is set. Enjoy hot or cooled. That's the beauty of this dish.
