berry breakfast bake

This recipe came with an advertisement to get my air conditioner tuned up for summer! I adjusted it a bit for clarification and choice of ingredients. You could use chopped peaches or a different kind of fruit preserves, even though it wouldn't be 4 berries!! You get the idea!

Ingredients For berry breakfast bake

  • 1
    left over loaf of brioche or french bread
  • 3/4 c
    raspberry preserves
  • 8
    eggs
  • 2 c
    milk
  • 2 tsp
    cinnamon
  • 2 tsp
    vanilla extract
  • 1/2 c
    brown sugar
  • 1/2 c
    blueberries
  • 1 c
    strawberries
  • 1/2 c
    blackberries
  • powdered sugar or crunchy coarse sugar for garnish
  • whipped cream, optional

How To Make berry breakfast bake

    Preheat oven to 350ºF. Spread jam on slices of the bread and cut into cubes. Cover bottom of 9x13 baking dish with bread.

    Whisk together eggs, milk, cinnamon, vanilla and brown sugar and pour over bread.

    Add all of the fruit to the top. You will have to push them down a bit so they don't completely float! Let sit for 15 - 30 minutes. Or, cover with plastic wrap and refrigerate overnight.

    Bake for 35-50 minutes (depending on if you had it in the fridge). Dust with sugar of choice before serving. Squirt on some whipped cream, if desired.
