Ingredients For baked sausage and sweet potatoes

  • 1 lb
    fresh or smoked link sausage, cut into 3/4 inch pieces
  • 2 lg
    sweet potatoes, cut into 3/4 inch cubes
  • 1 lg
    onion, chopped into 1/2 inch pieces
  • 1 lg
    green bell pepper, chopped into 1/2 inch pieces
  • 8 oz
    cremini mushrooms or white button, halved or grated
  • 1 tsp
    dried thyme leaves
  • 1/2 tsp
    dried or rubbed sage leaves
  • salt and pepper, to taste
  • olive or other vegetable oil

How To Make baked sausage and sweet potatoes

  • 1
    preheat oven to 400. combine all ingredients in a baking pan sprayed with cooking spray, adding just enough olive oil to the mixture to coat slightly.

    toss well. cover tightly and bake for 30 minutes. remove cover and continue to bake until sausage is cooked through and the vegetables are tender, about 30 minutes.

    serve immediately, or tent with oil and keep warm for up to 20 minutes.
