Ingredients For baked sausage and sweet potatoes

1 lbfresh or smoked link sausage, cut into 3/4 inch pieces

2 lgsweet potatoes, cut into 3/4 inch cubes

1 lgonion, chopped into 1/2 inch pieces

1 lggreen bell pepper, chopped into 1/2 inch pieces

8 ozcremini mushrooms or white button, halved or grated

1 tspdried thyme leaves
-
1/2 tspdried or rubbed sage leaves

salt and pepper, to taste

olive or other vegetable oil
How To Make baked sausage and sweet potatoes

1preheat oven to 400. combine all ingredients in a baking pan sprayed with cooking spray, adding just enough olive oil to the mixture to coat slightly.

2toss well. cover tightly and bake for 30 minutes. remove cover and continue to bake until sausage is cooked through and the vegetables are tender, about 30 minutes.

3serve immediately, or tent with oil and keep warm for up to 20 minutes.
